For the first time since the end of the Second World War the Dexter Breed is making a return to The Royal Smithfield Show in 2008.
Although small in stature when compared to modern beef breeds the traditional Dexter sells on quality not quantity. With more TV exposure that almost all other traditional breeds the Dexter has taken its quality beef to the very top, with accolades from top chefs on the Great British Menu and Britain’s Best Dish.
Dexters are well able to be finished on grass, which ensures a high content of omega 3 and unsaturated fats, whilst the dual purpose nature of the breed and the old adage ‘milk makes meat’ rings true in the well marbled compact joints that discerning beef eaters long for. This makes for tender and tasty beef every time.
A typically finished steer can reach a mature liveweight of up to 460 kg when taken to 30 months but a more ideal weight would be 300-380kg at 18-22 months. With a high percentage kill out rate the Dexter typically yields a carcase weight of 180- 220kg. Although small, most Dexter beef is marketed direct to the public or restaurateur at a price that reflects the quality of the beef.
This direct selling system to the ‘end user’ makes up for the lower yield of beef when compared to ‘commercial’ beef stock by generating a return of , on average, between £9.00 and £11.00/kg dead weight.
Many Dexter Beef producers have a waiting list for the premium cuts such as the fillet when sells at up the £40.00/kg
There is no doubt that in today’s uncertain market small is both beautiful and profitable. Hence the Dexter Cattle Society phrase –
